You’ve spent countless hours comparison shopping for the best toy deals, scrolled through thousands of holiday photo cards, and managed to secure the perfect holiday family-matching pajamas you know your husband will roll his eyes at (a win for mom!).

All of the Christmas extravaganza has barely just begun, but you’re already exhausted. When it gets to be too much, hole up in your den, kick back, and watch “Better Off Dead”. Every time you hear “two dollars” take a swig of this frosty blue cocktail and you’ll find your spirits lifted in no time. This Christmas Rum Cocktail is sure to revive even the most worn-out soul or soles (whichever aches worse!).

Ingredients you’ll need:

  • Rum. This needs to be light rum, as gold or dark rum will muddy that perfect blue hue.
  • Blue Curacao. In a pinch, you can substitute plain old Orange Curacao and add a few drops of blue food coloring. It will taste exactly the same.
  • Pineapple Juice
  • Lemon Juice. Fresh squeezed is always preferred, but in a pinch bottled lemon juice will work too. I like Santa Cruz Pure Lemon juice that is not from concentrate.
  • Cream of Coconut. My favorite is Coco Lopez Cream of Coconut. Nothing else holds a candle to this stuff.
  • Heavy Cream. You might be tempted to skip this, but don’t. It adds a wonderful full-mouth feel.
  • Cocktail Cherry Garnish. A bright red maraschino cherry is preferred to complement the colors of the season.

How to make this Christmas Rum Cocktail:

  1. Combine all the ingredients in your shaker.
  2. Shake vigorously with crushed ice and pour into your glass. Top with more crushed ice.
  3. Garnish with a cherry on top and serve with a stir stick.

Notes:

I recommend pouring the Coco Lopez into a glass container once you open the can…then you can nuke it in the microwave for a few seconds first and have a much easier time pouring it in your jigger. A pint mason jar with a tight-fitting lid works perfectly for storing it in the fridge later.

Serving Tip

To make this a festive drink I highly recommend procuring a Christmas glass to drink this out of. It will undoubtedly add to the holiday cheer and jubilation that should accompany a Christmas cocktail. You can scour thrift shops this time of year and usually find some fun gems. There are so many fun retro designs, you can’t go wrong with any of them.

How to make this for a crowd:

The best way to make this for multiple people is to blend it in a blender. You can fit about 4 servings in a 64 oz. blender. Multiply the ingredients by four and add roughly 4 cups of ice. Blend and serve.

  • 1 oz. Blue Curacao (or Orange Curacao with 2-3 drops of blue food coloring)
  • 2 oz. Pineapple Juice
  • 1 oz. Lemon Juice freshly squeezed
  • 2 oz. Cream of Coconut Coco Lopez
  • 1 oz. Heavy Cream
