Nothing says spring quite like flowers and pastel colors… and lavender is one of my favorite colors to decorate with during this time of year. So naturally, coming up with a pastel purple cocktail was a must-do for the spring season ahead filled with plenty of brunches, garden parties, and family gatherings.

Purple Butterfly Pea cocktails are not new to the cocktail scene, but they may be for your bar. If you have never used this wondrous powder before, you will be amazed at the magical transformation it performs in your glass.

This powder is made from the butterfly pea plant, a flowering vine that is native to Southeast Asia. It is often used as a tea but is a fun addition to cocktails, punches, and shakes too. The blue powder can range from deep blue to purple, depending on the pH of the liquid it is mixed with. Acidic juices (like lemon) will cause the color to shift from blue to purple to pink depending on the acidity level and the quantity added.

Why you’ll love this recipe:

  • SPRING FLAVORS. The botanical notes of the grapefruit & rose combined with tart lemon and spicy ginger are a nod to spring when the landscape is abloom in fragrance and color.
  • GORGEOUS. The pastel lavender hue of this drink is just dreamy. Perfectly sweet and feminine to delight guests with some spring eye candy.
  • LOW PROOF. Sometimes this is a good thing, and much needed for certain guests. This is a lower-proof cocktail with only 30% alcohol by volume making it perfect for brunch or afternoon garden parties when you don’t want the ladies getting “schnockered” after one drink.

Ingredients needed for the Spring Flower Cocktail:

  • KETEL ONE BOTANICAL GRAPEFRUIT & ROSE. Ketel One makes great Vodka, and their Botanical spirit line-up does not disappoint either.
  • GINGER SIMPLE SYRUP. Make this from scratch for the best flavor. This super simple recipe is below.
  • LEMON JUICE. Fresh squeezed is always preferred, but in a pinch bottled lemon juice will work too. I like Santa Cruz Pure Lemon juice that is not from concentrate.
  • BUTTERFLY PEA FLOWER POWDER. This gives the drink that lovely lavender hue. This 4oz. bag is a great value and what I personally use.
  • LEMON GARNISH. Yellow lemons compliment the purple perfectly…feel free to be creative with your garnish.

Tools you will need:

  • MEASURING JIGGER. This copper jigger from Cocktail Kingdom is my go-to.
  • BOSTON SHAKER. A good quality shaker is a staple for any bar.
  • COCKTAIL STRAINER. You will need this to strain the ice out.
  • COUPE GLASS. An elegant coupe glass will really elevate this purple cocktail. You can also use vintage goblets or punch cups for added charm.

How to make the Spring Flower Cocktail:

  1. First, make the Butterfly Pea Flower liquid by combining the powder with hot water and mixing until dissolved. For a small batch combine ½ tsp with 2 oz. of water. You will only need ¼ oz. of this liquid per cocktail.
  2. Combine the Ketel One Botanical Grapefruit & Rose, ginger simple syrup, Butterfly Pea Flower liquid, and lemon juice in your shaker.
  3. Shake vigorously with ice and strain into a chilled coupe glass.
  4. Garnish with lemon, faux flowers, or edible flowers if desired.
  5. Cheers!

PRO TIP: Rather than mixing in the Butterfly Pea Flower liquid, you can also pour it on top of the finished cocktail for an ombré layered effect.

How to make Ginger Simple Syrup:

Tools:

  • Small Saucepan

Ingredients:

  • 1 cup water
  • 1 cup sugar
  • ½ cup of fresh ginger peeled and chopped

Instructions:

  1. Add equal parts water and white sugar to a saucepan. Bring the water to a boil and stir until the sugar is completely dissolved.
  2. Add the ginger. Reduce the heat and simmer for about 10 minutes.
  3. Remove from heat then cover with a lid and let sit for a minimum of one hour before you use it. The longer you let it sit the more flavor you will get from the ginger (I like to let mine steep overnight).
  4. Strain out the solids and transfer to a syrup bottle with a tight seal.
  5. Store in the refrigerator for up to 2 weeks.
