Easy Green St. Patrick’s Day Jello Salad

For a simple quick dessert, you can’t go wrong with a Jello salad. This creamy St. Patrick’s Day Jello salad is packed with the fruity flavors of pineapple, lime, and lemon. It is an easy make-ahead dessert perfect for any occasion.
I love a good jello salad mold…the fun shapes and colors are a feast for the eyes and the flavor combinations you can make are endless.
This green St. Patrick’s Day Jello recipe is a variation on my Mom’s Raspberry Cranberry Jello Salad, an equally delicious dessert you must try.

This fruity dessert is sweet and creamy yet refreshing at the same time. This is a crowd-pleaser and makes for an impressive dessert, for St. Patrick’s Day, Easter, Mother’s Day, or any other special occasion. This is super quick and easy to make and can easily be made a day or two in advance to save you precious time on the day of your event.
Ingredients for this St. Patrick’s Day Jello Salad:
- Lime Jello. You can use one large package or two small packages.
- Crushed Pineapple. Juice and all.
- Sour Cream. I use the regular version, but low-fat will also work.
- Heavy Whipping Cream. You can also use store bought whipped topping if preferred.
- Lemon Yogurt.
- Powdered Sugar.
- Fresh Lemons. You’ll need this for the zest and also the garnish.
- Green Cherries. Green Maraschino Cherries really set this dessert apart with a fun clover garnish.
Tools you will need:
- A Jello ring mold. I use a vintage 80s Tupperware Jello Ring mold which I love. You can also use a new Tupperware Jello mold or any molded pan.
- A Medium Saucepan.
- A Stand Mixer or Hand Mixer. This Hamilton Beach mixer is my go-to for quick jobs.
How to make this St. Patrick’s Day Jello Salad:
- Prep your Jello ring mold by greasing it with canola oil or coconut oil to help prevent it from sticking.
- Combine the crushed pineapple (with the juice) and the Jello in your saucepan. Add the water and cook over medium heat until the Jello has dissolved. Let cool to room temperature.
- Add the sour cream and stir to combine.
- Pour into your Jello mold.
- Seal and store in the refrigerator overnight.
- When ready to serve, invert on a plate. Tip: if it doesn’t release easily you can dip the outside of the mold in hot water for a few seconds to help it release.
- Whip the heavy whipping cream, yogurt, and powdered sugar until stiff peaks form. Zest half of a lemon into the whipped cream and fold in gently.
- Fill the center of the Jello ring with the whipped cream and zest the remaining lemon on top of the whipped cream.
- Decorate the Jello mold with lemon wheels and green cherries. Tip: skewer the cherries on toothpicks and insert into Jello to keep them securely in place.
- Finish with three green cherries and a step in the center of the whipped cream to form a clover. Serve immediately.
Does a Jello mold need oiling before Jello is added?
Yes, this makes it so much easier for the Jello to release from the mold. I suggest an oil that doesn’t add too much flavor like canola oil, vegetable oil, or coconut oil pairs well. If you are still having trouble getting the Jello out, dip the mold into hot water for a few seconds to loosen it. Just a few seconds, too long and it will melt your mold.
What can I use as a Jello mold?
Almost any type of molded pan made from plastic, metal, glass, silicone, or ceramic will work. I find that a Tupperware Jello mold with a crown insert works best for ease of releasing the mold without damage.
Can I use a different Jello flavor?
Yes, you can use any Jell-O flavor you want to customize this dessert. Some other great flavors to try are cherry, strawberry, peach, and orange. You can also use a different yogurt flavor in the whipping cream to customize the flavor.

Easy Green St. Patrick’s Day Jello Salad
Ingredients

- 1 6 oz. Package of Lime Jello or two 3 oz. packages
