Easy Green St. Patrick's Day Jello Salad

For a simple quick dessert, you can’t go wrong with a Jello salad. This creamy St. Patrick’s Day Jello salad is packed with the fruity flavors of pineapple, lime, and lemon. It is an easy make-ahead dessert perfect for any occasion.

Ingredients
  

Jello Salad

  • 1 6 oz. Package of Lime Jello or two 3 oz. packages
  • 1 20 oz. Can of Crushed Pineapple
  • 1 cup Water
  • 2 cups Sour Cream

Whipped Cream Center

  • 1 cup Whipping Cream
  • 1 6 oz. Cup of Lemon Yogurt
  • ¼ cup Powdered Sugar
  • Fresh Lemons for the zest and garnish
  • Green Cherries for the garnish

Instructions
 

Jello Salad

  • Prep your Jello ring mold by greasing it with canola oil or coconut oil to help prevent it from sticking.
  • Combine the crushed pineapple (with the juice) and the Jello in your saucepan. Add the water and cook over medium heat until the Jello has dissolved. Let cool to room temperature.
  • Add the sour cream and stir to combine.
  • Pour into your Jello mold. Seal and store in the refrigerator overnight.
  • When ready to serve, invert on a plate. Tip: if it doesn’t release easily you can dip the outside of the mold in hot water for a few seconds to help it release.

Whipped Cream Center

  • Whip the heavy whipping cream, yogurt, and powdered sugar until stiff peaks form. Zest half of a lemon into the whipped cream and fold in gently.
  • Fill the center of the Jello ring with the whipped cream and zest the remaining lemon on top of the whipped cream.
  • Decorate the Jello mold with lemon wheels and green cherries. Tip: skewer the cherries on toothpicks and insert them into Jello to keep them securely in place.
  • Finish with three green cherries and a step in the center of the whipped cream to form a clover. Serve immediately.
