Treat your loved ones to the delightful taste of Christmas caramel popcorn. Loaded with gooey caramel, salty nuts, and M&M candies, this is a treat they won’t be able to resist.
Pop the popcorn kernels into a large bowl. Set aside.
In a large saucepan melt the butter, then add the sugar and syrup. Cook for 4-5 minutes stirring occasionally.
Remove from heat and add the vanilla and baking soda. Stir to combine.
Add the nuts and stir to coat evenly.
Pour the caramel mixture over the popcorn in the large bowl and quickly mix to coat evenly.
Spread out on a parchment-lined baking sheet and sprinkle the M&M candies on top.
Once cool, break apart and enjoy.
Notes
I suggest setting a timer for 5 minutes as soon as you add your sugar and syrup to prevent overcooking the caramel. The longer it cooks the harder it will be, and we are after soft chewy caramel.
Store in an airtight container at room temperature. This should easily stay fresh for several days.
