The Bee’s Knees is a classic spring gin cocktail you need to include in your cocktail repertoire. This prohibition-era cocktail is made with gin, tart lemon juice and sweet honey for a perfectly balanced libation.
For the Honey Syrup: Combine equal parts honey and water in a microwave-safe dish. Microwave on high for 1-2 minutes or until the honey dissolves into the water.
Juice your lemon.
Combine gin, honey syrup, and lemon juice in your shaker with ice and shake vigorously until well chilled.
Strain into a chilled coupe glass
Rub lemon peel around the rim of the glass to add extra zest and aromatics if desired.
Garnish with lemon peel or edible flowers.

Notes
I usually make a big batch of honey syrup so I have leftovers for future drinks. 1 cup of water and 1 cup of honey will yield enough honey syrup for a party. Store in a glass syrup dispenser in the fridge for 2-3 weeks.
